Chocolate Chip and Oatmeal Cookies

When I was little I would come home from school and treat myself with an afternoon snack consisting of chocolate milk and cookies, there was always cookies in the cookie jar, vanilla, chocolate, coconut, others with strawberry jam, others had chocolate chips, some with chocolate ganache, the list is endless, it was an afternoon feast, I remember seating in front of the tv and watching the only afternoon cartoon show for kids, it was 1 hour-long and it was glorious!

Oatmeal and chocolate chip cookies feel like home, and I guess all of us like to keep those memories alive and if we can, re live them with our kids. they are easy to bake, you can have your kids help you, you can replace the chocolate chips with almost anything, I love them, my kids love them, these cookies don’t last very long in my home, actually if you carefully look at the pictures that I uploaded on the post you will see that the cookies in the pics are what’s left from my baking morning adventure, we had a few friends over for a play date and I guess none could resist freshly baked cookies. The recipe is very simple, and you can find it written on the lid of any Quaker oatmeal container, but if you can’t find it, here it is…

Oatmeal Chocolate Chip Cookies

Ingredients

1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened

3/4 Cup(s) firmly packed brown sugar

1/2 Cup(s) granulated sugar

2 Eggs

1 Teaspoon(s) vanilla

1-1/2 Cup(s) all-purpose flour

1 Teaspoon(s) Baking Soda

1 Teaspoon(s) ground cinnamon

1/2 Teaspoon(s) salt (optional)

3 Cup(s) Quaker® Oats (quick or old fashioned, uncooked)

1 Cup(s) raisins

Cooking Instructions

Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and chocolate chips; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
