Spinach Tart

This Tart is a classic at my house, my dad used to make it  for us when we were little and now that I have kids I keep on with the tradition, some people ask me how do I make my kids eat son many vegetables, and I have to say that I don’t have an answer to that, the only thing I can say that might have done the trick is that there has always been only one menu at dinner time and  you eat what’s in front of you and that’s it, also that I always cook with very simple ingredients, nothing to spicy or too strong.

For this pie, you will need:

  • 1 pk puff pastry 
  • 2 bags of spinach
  • 2 medium size onions
  • 1 egg
  • 1/4 cup heavy cream
  • 1/4 cup parmesan chees
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Olive oil

Directions:

For the pastry puff follow the directions on the box, set your oven at 400 F place the pan in  the oven on the lower rack for a few minutes , what you want in this step is to make sure it gets cook but the dough is still white.

In a large skillet or pan heat oil  over medium-high heat until hot. Use about 1 tablespoon fat per onion.  Add sliced onions and cook for 5 to 7 minutes or until tender, stirring frequently with a wooden spoon or heatproof spatula, until they are tender. Remove from the heat and save for later.

Return the skillet to the heat with 2 tablespoons for olive oil over medium heat, cook the spinach until tender, you might have to do it in batches.

In a bowl, combine the cooked spinach, the onions, the cheese, the salt, pepper and the egg, integrate the ingredients.

Spoon the spinach mix onto the already cooked pastry puff, level the filling and sprinkle the whipping cream on top of it.

Place the pan  in the oven at 400 F on the medium rack, cook for 20-25 minutes or until the dough changed color to golden brown.

Allow a few minutes to cool down a little, and enjoy!

    This looks awesome but you didn’t specify the bag size of the spinach…two large?
